« Clay limestone soils » Mechanical harvest. Maceration and cold fermentation for 15 days with winding twice a day. Alcoholic fermentation started at 15 ° C and thermoregulation between 16 and 18°C. Aging on fine lees in stainless steel and concrete tanks for 10 months.
80% syrah – 20% grenache
Dress: garnet Nose: red fruit and sweet spices (cinnamon) Palate: harmonious, red fruit and spices, melted tannins.
Ideal for all moments of conviviality, this wine will accompany perfectly Provencal recipes based on sun vegetables (peppers, eggplant, zucchini). Some ideas: Rib of beef and Var ratatouille, or pie rabbit with Provence herbs.
