argilo-calcaires \u00bb<br \/>La vendange se d\u00e9roule tardivement, entre le 10 septembre et le 10 octobre.<br \/>Les nuits sont plus fra\u00eeches sur notre secteur de l\u2019arri\u00e8re-pays varois et notre vignoble est<br \/>situ\u00e9 \u00e0 une altitude de 300 m.<br \/>La r\u00e9colte est r\u00e9alis\u00e9e de fa\u00e7on m\u00e9canique durant la nuit entre 3 et 9 heures le matin.<br \/>Les vignes sont tr\u00e8s proches de notre chai de vinification ce qui permet d\u2019apporter les raisins<br \/>tr\u00e8s rapidement au pressurage.<br \/>Une mac\u00e9ration pelliculaire est r\u00e9alis\u00e9e pendant environ 6 heures afin d\u2019optimiser le potentiel aromatique.<br \/>Le d\u00e9bourbage est effectu\u00e9 \u00e0 froid (maxi 14\u00b0C) pendant 48 \u00e0 72 heures.<br \/>La fermentation alcoolique est lanc\u00e9e \u00e0 15\u00b0C et ensuite thermo-r\u00e9gul\u00e9e entre 16 et 18\u00b0C pendant 10 jours environ.<br \/>Nous proc\u00e9dons ensuite \u00e0 un \u00e9levage sur lies fines en cuves inox pendant 3 \u00e0 4 mois.<br \/>Le vin est ensuite soutir\u00e9 puis filtr\u00e9 fin d\u00e9cembre.<br \/>Il se repose pendant environ 3 mois et est pr\u00eat
